For split screen co-op FPS, Halo 2 works, Gears of War is also really good, and Rainbow Six: Vegas (my personal favorite).
If you get 2 consoles and 2 TVs your options really open up a bit playing over LAN with games such as Crackdown (Kick ass GTA-ish game) that don't offer split screen co-op, but do offer system link co-op. Also, Rainbow Six: Vegas performs much better over system link as playing split screen seems to tax the 360 (that's all I've played it on) quite a bit, and it will lock up occasionally.
