I'm a newbie lvl 31 Assassin. Is there any good assassin gear that I should be working toward just yet or do I not really need to worry about this until more towards the late 50's or 60's?

Try getting Et'sipe's Haubergeon of Undeath. Other then that the fun doesn't start until lvl 80

make the EoF quests starting in Steamfont , some nice items are dropping there ( warding cloak , mecanized bow etc..) for the rest just stick to mastercrafted armor ,weapons and jewellery.
Later some stuff will drop from instances (klakanon, court of innovation etc )
