The best way to deal with Templars is to just knock them arround until they pop sanctuary. As soon as sanctuary is up run away. Many templars will chase after you because they just popped their biggest temp and think they are safe. Swing your cammera arround make sure they follow you. Watch for sanctuary to drop then turn arround hit Chi+KO. If the templar chased after you their pre-heals will be down and you can stun lock them before they get any more heals off.
