But seriously I voted Guard MT Pally OT or vice versa. We run it either way depending on who feels like tanking and it works out just fine.

Pretty much sums it up imo. Obviously any of the plate tanks can do the job if they don't suck. If you are saying all things equal (including player skill) I would still go with Guardian + Pally combo. Guardian is the obvious choice for MT and the snap/aoe aggro Paladins have is hawt sauce. Plus, amends makes it easy!
