A better indicator of your effectiveness is the incoming heals on the MT rather than your encounter total. Right click on incoming heals and select look up by combatant, do the math, and get an exact figure (this is more accurate than just looking at the graph if, for example, both you and the templar have the rune etched helm and/or OH gear). As was noted above, there are several things which will affect your encounter parse and ZW parses such as aggro switching, AoE's, and range of other healers.
Regarding dps - this is completely mob and raid dependent. I can consistently maintain 1500 dps on VP trash and capture 65%+ of incoming MT heals assuming 70k+ raid dps, proper mob and raid positioning to limit AoE, and a steady pull rate. I have no idea where this ranks in the WW scheme of things, but I have almost broken 2K a few times. Here is one of those parses...

This also illustrates the sometimes deceptive nature of the heal parse - the templar topped it for the encounter, but only had 36% of the MT incoming heals while I had 48%.
A final note on defiler dps - it has been my experience that MT's get cranky if they drop below 100% health and outright indignant if they die because you were trying to increase your dps.
