I couldn't tell you the original thinking, since it was Beghn who made those recipes, long before my time. I'd guess, however, it's because the general theme look of the KoS furniture did look metal. Especially for furniture, when you have a furniture item that looks like it's solid rock or metal, it seems silly to have the recipe use only wood and roots. Because the theme of KoS was very metal/stone looking, I'd guess Beghn felt it made more sense to have a heavier ore use. It IS a bit unfortunate from the harvesting point of view. I'm now trying to add a few more recipes to that level range that use a bit less ore. But, it does make sense to match the ingredients to the product where possible.
Regarding the number of furniture recipes in RoK, I can't give out exact numbers at this point. However, I can explain that the reason carpenters have had fairly low numbers of new recipes with each new expansion is that the total file size of a new expansion is not infinite, it is limited in size. Of that size, new furniture graphics can only take up a certain amount of that space. And each new furniture graphic goes tend to add quite a bit size-wise. If I gave carpenters everything they'd like, we'd probably end up with a 3 day download or 27-DVD retail set!

So expect some more items per level than KoS, and I think that will include some quite nice ones that should be desirable in appearance, but keep in mind there are physical limits that will keep those numbers still on the lower side.
