In general I like mobs to have a bit more HP as well. I am partial to longer fights, probably because I play a healer. As for the mobs in Karnor's, they don't have a huge boost to their health, but it's enough to let them hit on you a few times before they go down. The zone is tuned the way it is thanks to the great feedback I got throughout the beta. When the zone first went up, players were plowing through them, so I had to adjust.
