Say you turn level 30 and now need T4 items. Unless you are over lvl 30 Adventure Level you can't really get the items you need to craft T4 recipes.
I personally levelled my carpenter to 70, harvesting the large majority of my harvests on my own, and she was not higher than adventure level 30 by the time she reached 70. I believe I was harvesting in Feerrott in my late teens, and Sinking Sands through my 20s. Is it risky? Sure. I probably have a kills vs deaths ratio rivalling the above poster's.

But it's doable. And the collectibles I picked up while harvesting in Sinking Sands funded a 40% speed horse, and that saved my life more than a few times after that!
Is it easier if you're a higher adventure level? Sure. You will likely get jumped regularly if you are low level, but it's entirely possible to get the harvests you need nonetheless. It's a trade-off, one of the choices that makes the game interesting. If you choose not to adventure at all, the result of your choice is that it's much more risky for you, but it's still a valid choice and still doable. Choosing not to adventure AND getting all your harvests totally risk free anyway, doesn't sound either practical in terms of game balance, nor much fun. A little danger (or a lot) adds excitement!
