I think I said this somewhere during RoK release, but I'm too lazy to go looking for it, so I'll just repeat myself:
When the reaction arts were changed (with RoK) we avoided complete cookie-cutter-ness by giving each archetype different advantages and disadvantages. Craftsmen are slightly better at increasing progress; Outfitters are slightly better at increasing durability; and Scholars are slightly better at conserving power and increasing success chance. Your arts improve at 20, 40, 60, and 80.
There's no difference whatsoever based on your race, the arts that an arasai jeweler uses are the exact same ones that a ratonga jeweler or an erudite jeweler or a troll jeweler use. The only difference with race is if there are any racial bonuses that increase your skill in that particular craft slightly. As Snowdonia said, it's nothing to do with race.
Comparing the characters listed above doesn't really reveal anything since they're different archetypes and different levels. To really compare, all the characters would have to be in the same level range (e.g. under 20, or 20-39, or whatever) so they have the same number of upgrades to their reaction arts. If you were to do this you would find differences between the archetypes, but not between the races. As the characters level up and get upgrades to their reaction arts they will all improve noticeably and the differences will become much less noticeable. My own jeweler levelled up long before the reaction arts were changed but certainly doesn't have any problems nowdays, using the 60-79 range arts (haven't quite made 80 yet).
