Thats very odd that they aren't stacking. Please PM me your server and character name so I can copy it over and experience the problem myself.
The server should be comparing the book title and a
CRC of the book text. If they match, it should stack them. If you used the copy feature, those values should be identical so there must be some gremlin in the works somewhere.
