Rest assured, "perfect balance" is quite impossible to ever obtain. Even if we calculated down to the last root exactly how much of each item every level 20-30 recipe would use for every class, and then balanced the harvest tables and spanked the RNG appropriately so those exact numbers dropped, it still wouldn't work. Because 27 more people will decide to become provisioners on Server A than the 27 who chose to be armorers on Server B, and the alchemists will happen to be far more popular on PvP servers due to their potions and cures, while the RP servers may have more tailors and carpenters for the RP aspects, and .... well, you get the picture.
Every server is different from every other in terms of the resource balance they need, and even within a server, the proportion of what harvests are needed changes constantly as crafters level up and decide to make one item or another item, and suddenly there's a demand for agate, or a lack of demand for pelts, or whatever.
A perfect balance will never be possible, prices will always fluctuate and there will always be some resources less in demand than others, leading to their prices dropping, although which resources may differ between servers. The OP need have no worry there!
