What does this stat actually do? Say I get an earring with plus 5 dps on it. How does that effect my main hand weapon?

Scroll your mouse over your DPS mod and you will answer your own question.

There is also a curve on the mod. at only +5 you'll scroll over to see it something like 8 or more in % terms I think, but I know the coercer buff adds 78 mod but that is 75% (if it is the only dps mod) The closer you get to 200 mod the closer you get to 100% I think.

The true cap is actually 125%, it was chaged to that when the curve system was first introduced
