I would say that you don't need a templar for any of VP. That is more of a game issue that reflects on how poorly the original question is framed. No one is essential, but I would say some are less essential than others.

Silverwing and Phara Dar are possible and have been done before with four healers as well.

My reasoning for picking Templar and Mystic though is that if I'm going from a no-priest raid to a 1-priest raid, I would choose either the Templar or a Shaman. Either alone are enough to start the trash in an instance - that is as close to essential as you're going to get.
