If there is a blacksheep in the company with the intent of fraud then the least of your concern is what you say in chat. Considering if they have access to logs I'm sure they can get at other data that would already be stored on their servers. Its no different than any other company TBH. The same thing can happen using your credit card at your local store or someone overheaing your conversation about something sensitive.
