Personally I'd rather go the IRC route. I'll just have to do without while I'm at work. Probably for the best anyway, the forums AND chat would kill my motivation to do anything productive.

Great job, now I wonder if the devs have the gumption to face the maybe top 25 most difficult questions asked in EQ2 history? Nothing against them if they can't handle it.  lol
Also, what commands do I use? I mean, I assume you plan on setting up a channel whenever the time arises, right?

Yeah, we'll work out the details (moderation) when/if the opportunity arises.
However, if you want to mess around it uses the same commands as any other IRC client. You can use mIRC, BitchX(Linux fans!), the FireFox plugin, or the Java applet I linked.
Most importantly would probably be /join #channelname and /msg instead of tell. There's also an IRC guide here.

Here's a suggestion when forming questions that devs are likely to answer whether it's in a chat, at a fan faire, or on a board: Difficulty has nothing to do with it. We ask each other questions on the clock every day that are just as difficult as anything we get asked in public. Hell, most of us think the difficult ones are a lot more interesting.
The ones that most frequently get skipped/rejected are the rude or slanted ones. It's possible to ask a tough question without being offensive. The people who've figured that out tend to be the ones who get their difficult questions responded to. Here's some examples: - "Is such-and-such going to suck as bad as the last time you did it, or worse?" That's not a difficult question, that's an idiotic one. We've skipped over plenty of those in chats.
- "Are you going to fire (person) for doing (some part of their job I didn't like)? If not, why not?!" Probably not, but even if we were, I'm fairly certain I couldn't tell you.
- "What are the biggest issues you run into trying to balance high end raids?" That's a difficult question with a myriad of answers that we could talk about for an hour, and probably be pretty entertaining with it. But to a small number of people. Much more likely to get answered in person at a fan faire, rather than take up a whole session responding to just that question in a chat, because it needs that much time to do it justice.
- "What was the thinking behind (thing)?" That's a question that's frequently difficult (read: hard to summarize in a short answer) and objective, and likely to get answered. The answer is likely complex, but they're always worth answering, especially in person.

Look at that, an SOE response and an informative one!
That's another reason you guys also might want to consider a Q&A versus a chat. The "25 most difficult questions ever faced in EQ2" (which sounds really dramatic and deserves movie music) might take 5 minutes a piece to answer. These chats last an hour, I've never seen one longer. A Q&A would give them an opportunity to answer accurately and not be rushed.
If you are organized enough though, it could very well work.
