I use Fetish Nightfall myself, but I started using it when I first started playing so I'm used to it. I've tried Profit, and I like it but I'm never really in the mood to learn a new UI when I'm so used to Fetish.
Downside is that Fetish isn't updated as frequently as Profit.
I'd go with Profit for a good, solid UI choice.

Wondering about the profit UI...I use the defaultone, does Profit have anything beneficial to Tanking?
Other then click to cure your self with potions i don’t think there are any benefits to tanks in custom UI's?
no doubt you get more info on the screen using Profit, i use it my self but i wouldn’t say it helps me do a job i couldn’t with Default

im a long time user of the default UI and just resently switched to profit. i like the larger HP% numbers makes mobs with HP based effects a bit simpler tank since your not stuck guessing or looking around for some in group chat to call it(default UI hp% is rather small). i also like the bottom stats/mitt/avoid/resist and ability to enlarge hostile icons before i had to open my persona and glance in there to see my stats when a debuff was on me, and not having to right click on a tiny icon is nice too.. but over all i wouldent consider it a big help like it has ben for my healers(i use to use tons of macros)
Default for the win. I prefer hotbuttons for cures as u can see number of pots remaining easilly.
I've set up my window so that the hotbuttons are effectively under my hp bar with correct positions for each cure type. Another cool thing is to have ward potions either macroed or in row just under those cures so you can see if ward pots available after self cures and click a ward up of correct type easilly.
Don't forget you can resize buttons in default ui now :P
On anothe note what is with the ui in this game literally dropping my frame rate by an order of magnitude... press f10 a few times and feel the difference!
ProfitUI now has reuse timer overlays over the hotbar buttons. And it's the only UI that has it.
Personally I am not going crazy about it but it was one of the most requested features for custom interfaces, so once it became possible with GU43 I added it.
