I don't have my monk on a pvp server, heck none of my characters have been played since before ROK BUT....
Playing a swashy on a pvp server and doing plenty o' duelin with my monk one thing I've really learned that can make or break any fight is knowing your apponent. Know there skills, know there damage types, learn what strat you'd be using if you were playing that character.
My swashy had a toolbar packed with macro's just for instant gear swaps so I could max my resists vs particular damage types. Anti stifle, stun, root, and snare potions/charms work wonders vs some peeps. Boy do the rangers get to runnin' real fast when they realize they ain't gonna be able to snare ya. LOL Stack the right resists up and they'll be getting far more fizzles vs you then actual hits, even them durn roots...
Use those stuns to your advantage, us see invis and see stealth totems for them scouts, remember your taunt works as an interupt. Heck, I've even been known to have a /target <name> macro on my hotbar for when I'm in a crowded area and the durn opponent keeps making me drop target.
One lil trick I always liked...errr hated vs bruisers on my swashy was when I had one on the run and they'd do a FD and quick pop back up right before jumping over a bridge or something. FD also works as a "lose target" much like the scout's skills.
Still, remember to study your opponents, after you know them well enough, all you need is a target and you can tell from a distance what class they are just by checking out there self buffs.
P.S. I always liked the agi, wis, int lines myself for my monk....but remember I only dueled with that character. Int just HAD to be there, Crane Flock was GREAT spike damage to finish the tough ones off, and I LOVED the fast recast on my o'shit skills from the agi line. Crane flock and 33% health was giving me around 1800 to 1900 auto attack self buffed dps with some mid to upper level fabled 3.0 sec Tier 7 weapons back when I was testing things back then...NICE spike damage

Especially handy vs fast healers, get them down half way, stifle them and crane flock and thats all she wrote.
