Healing in and of itself isn't really 'fun.' I set little 'mental challenges' for myself (no one dieing in my group this fight, no one going to the orange/red this fight etc) but for the most part the 'fun' comes more in the 'DPSing' aspect of my mystic. Now this doesnt mean i dont like my mystic unless i'm DPSing, because i like knowing how much i almost unbalance a group/raid with our debuffs and our wards.
Although like i mentioned earlier, to me, and probably alot of other people, i enjoy the dpsing. I've likened us to a 'melee version of a fury' with the way we can heal and DPS at the same time. I love the idea of out healing other healers, while out DPSing them, and i know theres the 'unquantifiable' things we cast that aren't even factored into those parses (our debuffs and bolster specifically) that i cast.
Edit note as my post started before Jenya's but to also mention, I have tanked about half of some instances and parts of other instances while the tank was AFK, on my mystic before while being the only healer (fun!).

This too, I really don't see how a templar would be fun; after a while healing gets boring. I like melee-ing and debuffing.
So a better choice than templar would be Inquis as they are can melee and turn out even more DPS than a mystic while still healing effectively. Not to mention they get a nice assortment of misc. spells like root, fear, stun etc.

Just a correction here: inquisitors cannot stun (the deaggro and the impairment that triggers on CAs are irrelevant). Their root is absolutely shit (and pointless since they usually melee), likewise the fear. Templars have single target stun and single target daze which are quite powerful against heroic content. And half a templar's dps is from autoattack, which is in the same league as an inquisitor's autoattack. The perception that inquisitors are superior to templars in melee, and that templars are "casters", must be based solely on the few CAs the inquisitor can get, which aren't really all that better compared to fast cast dps spells.

I never said their misc. abilities were worth anything :P I merely said they had them (not to mention calling root 'shit' may show your own opinion but it can prove to be useful in some situations, i.e. fleeing foes? just for one example)...and yes, templars get the most of the same AA melee bonuses inquisies do, but there are a few that contribute to added DPS for inquisitors to pull ahead in the DPS spectrum (at least while intermittently healing and debuffing and such). So there was no correction necessary, as I stated fact. (except the stun, since you don't count that  I guess I was technically wrong on that one)

That's pretty damn close. I think it is more though.
To me Mystics are more of the bastard offspring of a Bruiser + Assassin + Necromancer gang rape on an orphan love child conceived by a Warden and a Shadow Knight.
And you just know that one of those had to be a fucking gnome too.
A couple of years ago i did a post on our guild forums about building a mystic and actually playing them (not burning them) to level 80.
It was titled "Mystic: Army of One"
I still think that title fits our class.
Mystics are just so damn versatile. The first thing I tell people when I join a group is that I am not a healer. I have 2 heals and 4 rez spells on my bar, take that for what it is worth. Always gets them worried, hehe.
