This game (EQ2) has tried doing colors, and it didn't work out. take a look at "the best" gear for a shadowknight from KoS sometime... we looked like Fucko the Clown in Pink spaulders and hat, red BP, green or white pants (depending on whether you were dps or tanking) blue gaunts and dark red boots....
The color palette you're whining about in EQ2 is called realism. Look around sometime, it's all grays and browns and greens IRL too. Instances by nature are indoor zones, and they give the feeling that you're in a tomb or treasure trove or fortress, nobody is going to lay their treasure out in the middle of a wheat field or next to an idyllic pond...
One of my beefs with WoW is that there isn't decent enough lore that a person can care about. Instances, for instance... a paragraph about the place you're going to via quest dialogue is about it... In eq2 these places were held in reverence or fear or awe or greed by NPCs and you got a real sense, that first time, that you were heading somewhere important.
