Also, for the priest classes, is the Priest of Mitra really as pitiful at any sort of melee combat like the AoC class description makes him appear to be? I am pretty sure I'd like to play a priest class, but am not sure yet. Any help would be awesome.

I haven't played the dark templar myself, all I know of them is what I read in the Global Chat. I heard some lowbie DT's saying the class sucks, then the higher level guys saying the class doesnt really get good til level 60+ (when they get some nice class defining abilities). People say the class solo's well.
In raid situations, DT will be the second class tank to the Guardian, but more defensive than the Conq. Only DT and Guard get to use shields, Conq can not. However, Guards can wear full plate, where DT and Conq can only wear heavy armor (one step down from full plate).
So the full plate + shield pretty much locks in the guard as single target raid tank. But in groups, DT should be fine. Supposedly DT is better at AOE tanking, and there are a lot of multi mob encounters, becuase it's hard as hell to single pull anything in AoC.
PVP wise, I have no clue. I don't pay much attention to the PVP stuff. I'm more of a PVE person, and PVP when I'm bored hehe.
You can set up some different builds for your class though, here is a link so you can check out the feat skil trees:

As for priest class, I don't know anything about them really. I played a Tempest of set to about level 10, was kinda cool. ToS can use a two handed sword and turn into a badass looking demon.
