didnt raid much in t5 (drayek pickups ftw!) or t6, so i cant really speak for them. however i must say that of all the t7/8 raiding i have done, chel'drak takes the cake. it really sets apart the guilds that can kill standard design mobs from the guilds where everyone can switch their roles around somewhat as needed. fights like cheldrak, tactitians armor (scout tank ftw!), 3 princes, ect are what this game needs more of. fights which either make you think outside the box, or push yourselves to the maximum to overcome the way they work, while at the same time arent stupidly difficult to the point of insanity. kinda sucks i didnt have much time to play hardcore in t5, would have probably made me like the game a lot more back then

raiding just aint fun anymore =/

I enjoyed the Plane of Time back in EQ1 Each god being a different encounter was really a cool idea. I also really like the Citidel of Anguish from the OOW era of EQ1. One of EQ1's first Endgame raids that gave a server wide broadcast that you beat it. From EQ2 I currently enjoy the VS encounter myself, any fight that forces everyone to pay attention and work as a team I like. I've heard a ton of complaints about itemization about ROK and I tend to agree, lets hope they fix that soon, because I really like the end game raids so far.

I won't say he's my favorite encounter, but I like Dominus Chottal's primary mechanic. I like that he gives you warning of who's about to get f'd up. I like that more than say mobs that mem wipe and instantly turn and kill a mage (and perhaps frontal the raid) before you can do anything to prevent it.

I wouldn't mind more encounters that incorporate the feature of calling out someone's name shortly before something happens involving that person--not necessarily always a deathtouch but maybe a mem wipe, a teleport, or some other condition that requires 'pre-emptive' action from that player or other players. And like others have said, preferably those actions should be class-specific actions rather than clicking or harvesting shinies.

Djinn Master. Definitely required coordination and communication. Granted, we did it in T7 (as a brand-new raiding guild on PvP), but this still ranks as one of the best fights.

KoS
3 Princes. Unique tanking mechanics which made things interesting - forcing aggro switches, requiring DPS... all around good stuff.

FD
Chel'drak. As everyone's said - nothing particularly unique, except the class specific adds, but a damn fun raid with a lot going on.

EoF
Rumbler. A simple mechanic (mobs that split) which, combined with the AEs, the power drains, and the mobs themselves, made for a VERY fun encounter.

RoK
Venril Sathir (minus statue clicking). A fight with a lot going on - and the solid mechanic of power management (the only fight left in the game where my power matters). Original, and requires the whole raid to pay attention. Managed to show that a mob doesn't even have to be that hard to be a well designed encounter.

Don't get me wrong - there are some other very good, or good, fights (Overking, Silverwing, Pedestal of Sky, Ludmila Encounter), but those stand out as my favorites.

T5 - Everything, every raid was fun!
T6 - Pedestal of Sky + Djinn Master
KoS - 3 Princes
TFD - Chel'Drak
EoF - Woushi + Gardener Thirgen (once you got used to the encounter anyway heh)
RoK - Phara Dar

EoF: Clockwork Menance, I loved the idea of nonstop fighting until the end of the zone, it felt like an actual assault rather than killing named-by-named in isolation.
RoK: So far all I've seen is T2, but OK is my favorite so far

3P was my biggest rush killing it the first time, and I'm not talking an expansion later. But if you didn't have a raid leader who understood every detail of it you were F.U.X.X.O.R.D. IMO.
